Yes, Black-crowned Night-Heron is the AOU (and ABA, and ARCC) spelling.
Of course my original question:

didn't actually ask which was correct, it asked how sure you are that you are sure you know which is correct. 8-)

None of those listed. Should be Black-crowned Night-Heron, the first hyphen following the usual rule of no capitalization on the second hyphenated word (adjectival) and "Heron" capitalized as the substantive denominator despite the hyphenation.
