Does anyone know of good treatments of the subject aimed at the size/types
of vessels we are concerned with here?

This sort of stuff is found in the fishing vessel web sites. There is more
stuff in the USCG Passenger Vessel stability requirements.
Some of these articles are first rate and have excellent pictures, drawings
and presentations.
This post came from the Trawlering forum, but the material is even more
important to those making blue water runs.
The hidden danger for which I did not find any specific article, but I am
sure is buried in this somewhere: setting out with a "list" is dangerous in
that any additional shift of weight will aggravate an already poor
condition and in rough water may lead the vessel to a borderline condition
which can then be exceeded, with little additional warning.
