Steve, as Henry Dennig said, call ahead. The current web link is:

And, if I'm not mistaken, it's often a part of the Great Loop, isn't it?
It took a bit of clicking, but here is the boaters' data sheet:

Don't believe the "5-7 days transit". I'm not saying that one can't do it, but I would definitely prefer not to. I estimate about half that speed for a chance to stop and look around. I took about 6 days to get from Trenton to Fenelon Falls, which is roughly in the middle (and then retraced).
There's also a private site:

Another alternative with which I am more familiar is the Rideau System, but they used to state "5 feet" as the draft. The Rideau has a different character and history. Check out www.rideau-info.com, as well as you can find it on Parks Canada easily enough.

I draw 5'5" (nominally ...), and although I haven't had that boat on the Trent-Severn, the local knowledge is that I would bump from time to time ... but get through.
Remember that you'll be in a foreign country - easy to forget and causes occasional unpleasantness when people forget that our laws are different in several important respects.
