I don't think that reducing the crew from two to one, makes much difference in the room necessary on a boat. If there are two, about 1/3 of the time someone is in the bunk--and so one bunk is sufficient--in our case a double with moviable lee cloth.
The amount of food and storage for two vs one is relitatively small.
The space for sitting, eating etc still has to be a minimus--and works as well for two as one.
The only experience that I draw on is the long distance racing boats--which have long length water line--and use the same space with one or 6 crew. There is a minimum which a person is comfortable because of length and motion related problems--as well as fuel. There are people which cross oceans in 22 foot boats---but that is not the most comfortable or effecient way to do it.
Boojum or the little Boojum by Michael Kasten are examples of this mini passagemaker. If you review the plans and discussion I think that the boat would work the same for one or two.
But what happened to Boojum project. She was shipped to Seattle after sea trials, and from what I understand is used only occasionally in the PNW--no long voyage was done.
