Using less fuel is great for your wallet and the environment , but bear in
mind that your fuel cost is not going to be your major expense on most largish
catamarans.
Skinny hulls are fuel efficient but give you sucky weight tolerances and no
engine room space.
Most people don't cruise at speed all day.  Many places you cant even if you
wanted to.

"Skinny" is relative, in a 48 ft. a 13:1 ratio would offer plenty of engine
room space, if the boat is built light it would have plenty of payload
capability for one or two couple cruising.
