COMNAV and Simrad (and probably others) offer "jog levers" that are either

The Simrad FU51 is a "follow-up lever"  Set the rudder angle you want and
it moves the rudder to that position.  Maneuver to a heading and press
"Auto" and it will maintain the heading.  Press "Stby" and it disengages or
engages.  Others of these, like the S35 are non-follow-up or steering
levers.  Push right for right rudder movement, left for left movement.  I
have the FU51.  We never touch the wheel except to show people that it works.

The one I neglected to get and wish I had is the AP51 remote so I can hold
it in my lap and steer/jog/dodge lobster pots/ re-engage the autopilot all
from my comfy chair.  It will be there when I install the redudnant autopilot.
