Is this based on actual experience?  If so, what is the condition of the
craft w/ respect to payload, prop pitch, bottom condition?  I assume the
fuel usage is for both engines (Yanmar type 4LHA-STP) running at the same
RPM?

We have over 20,000 miles on our Endeavour Trawlercat and ran with a fully
loaded boat with fuel, water and food. Bob Vincents figures would be quite
accurate. We averaged 2 gallons per hour doing 9 mph using one engine to
cruise at most times.  This is one engine at 1900 rpm's. We let the other prop
shaft free wheel. When the waves get in the 2 to 3 ft. range hitting us from
the rear quarter we would run with two engines. Running both engines at 1900
rpm we would get 10 to 10.5 mph. Going straight in to 3-4 ft. waves we run at
3100 rpm's and will run about 18 mph.  We switched our chart plotter from kts
to mph because the inland waterway and Great Lakes paper charts are in miles.
We would measure the miles on the chart for every trip and physically measure
the fuel with a calibrated wooden dip stick or record usage when we refueled
to be accurate.  The Raymarine C120 is not accurate in recording miles.
