Class Description:
Plants, both cultivated and wild, have much to offer us in the way of
nutrition and medicine. In our last wild foraging meetup, we focused on
where to find certain plants, and how they can be our allies when
cultivating health. In this workshop, we will be going over the preparation
methods that will help you get the most antioxidants and vitamins out of
each food, as well as which foods have the best disease-preventing
qualities. A special focus will be placed on heart disease and cancer for
this purpose, since those are the two most prevalent ills we currently face
in our society, but in general the information will apply to a wide range
of health concerns.
As always, I will be presenting source documents and studies, and be giving
a primer on how to wade through all of the conflicting data and
pseudoscience that is out there in the field of health and nutrition. There
is no better weapon than knowledge, especially if it is knowledge about how
to approach information rather than just the information itself; this will
help you be able to make logical connections in the future, and take
empowered ownership over the nourishment if your body.
Taught by AFPA Nutrition Counselor and former chef Renee Meschi
