I have a planing powercat but know your complaint is common with this GB.
That said, there are many people who learn to overcome these deficiencies
through technique. Running downhill is tough as they tend to bow steer and
want to broach. To counter this you should have your hulls trimmed
up....way up. Some also find that adjusting trim differently on motors can
help to overcome quartering following seas. Remember trimming your port
engine up will lift the stbd bow and vice versa.
On the drift you may find that angling your motors one way or the other will
help to position the hull for better comfort. I find, and once again this
is a planing cat I have, totally different animal, the boat has minimal roll
compared to a deep V mono but the motion is quick rather than rolling.
Takes some getting used to. Like you I had a long history with various
craft before building this cat. It is a long learning curve to optimize
operation but once mastered it's a fine craft with capablities of a much
larger boat.
