Gene,
My money would be on just forming a standard countersunk hole for the
head. I wouldn't worry about perfectly matching the curvature of the
deck screw. Once it's all together, It won't matter and this doesn't
sound like a structural joint that will be under a significant amount of
tension either.
Just my $0.02.

The shock load of the handle being let go of, and its sliding
thru the bolt head until it runs into the stopper buffer and the knob,
make it imperative to get it attached firmly enough it won't get
knocked loose, yet the screw and cap can be removed to replace
the bumper piece. Or even replace the handle if it breaks.
I intend this should last as long as some of the 150+ yo stuff I
see advertised on ebay for $200 and up. A brand new antique,
stronger than anything I've seen go by on ebay so far since I've
not seen any with buttress threads.
IOW still working long after I'm gone. Which could be most any
time now since I'm now coming up on my 88th, but the battery
in my pacemaker still has around 5 years to go... The TAVR valve
in place of the aortic in my heart is a question mark though.
Take care and stay well, Bill.
Cheers, Gene Heskett.
