Woof- big boat! That's a nice problem to have :-) I suppose the first
step would be to estimate your static wind drag (see Hinz for method, or
ask me for a spreadsheet that does that given your frontal and beam-on
areas), then see how it compares to the holding power tests. The 2/3
power law for holding power as a function of weight will give you a
ballpark if you can't find test data for your load case.

I don't know a lot about really BIG anchors, but I do know that Bruce
makes them up to North Sea oil platform size (what they were originally
designed for).
