Has anybody seen a statistic on how much black water is produced per person per day? This would help me determine when I need to pump out my holding tank. Thanks.

Better yet, install a tank monitor. We use the SCAD tank monitors on
both of our holding tanks and they work well. Easy to install as long as
you have access to a non-metalic tank.

There are other options using the same system for metalic (heaven
forbid) tanks.
FWIW, I think you'll get answers all over the place. A lot depends on
frequency, how much fresh/raw water is pumped through in the process, etc.
