I would like to document our 6,000 mile +- trip with videos uploaded to YouTube. I managed today shooting videos with my IPad and or my iPhone but found that to be too cumbersome.
I think using a "video-cam" which I could download to my IPad (retaina display, 4th generation) and then upload to YouTube would be a better. I need to be able to start and pause the videos until I have completed a leg of our trip.
Any suggestions which would be the best video recorder?

Dealing with video is a pretty special operation. He quickly overwhelms you with the volume of the content that you end up taking. You must end up editing great gobs of it to make it bearable to watch anyone but yourself and your very very nearest love ones.
Good video can be shot by almost any simple camera nowadays. Everything is digital and be uploaded to a computer or to your iPad so I think the computer is more suited to video editing large amounts of material the iPad.
One suggestion is to buy a camera like a gopro a rugged Sports camera that would allow you to take single snapshots at 10 seconds or 30 seconds or one minute intervals which would create much more manageable montage of travel down the canals. You can get a water resistant housing and strap it to the rail of the boat so that you can see the view of the captain as you pass by the sights
